First of all, heat water in a vessel. Just before the water boils, add one teaspoon sugar and salt. After this add peas. By adding sugar the green color of peas remains intact. After cooking for just a minute or two, remove the peas and immediately plunge them into ice cold water. Due to this the peas do not get spoiled much. After this, spread the peas on a cloth and dry them completely.

The real life of pickle lies in its spices. According to Chef Bhupi, add fennel, cumin, black pepper, fenugreek seeds and mustard seeds in a pan and fry lightly. When the spices start giving off a pleasant aroma, cool them and grind them coarsely. Do not make fine powder of spices, because only coarse spices give the real texture to the pickle.

Now heat one cup mustard oil in a pan. When the oil is well heated, add nigella seeds, celery, asafoetida and curry leaves to it. Curry leaves add a unique and fresh flavor to the pickle. Chef Bhupi has described vinegar as the secret thing in this recipe. Adding 2-3 spoons of vinegar along with spices not only adds sourness to the pickle, it also acts as a preservative. By adding vinegar, pea pickle does not spoil for a long time and its taste also remains spicy. At the end, you have to add dried peas to it.

As soon as smoke starts coming out, place the glass jar upside down on it. When the jar is filled with smoke, straighten it and fill the prepared pea pickle.
