Making the Perfect Batter
For Ranani Uttapam, first soak 2 cups rice and 1 cup washed urad dal with half teaspoon fenugreek seeds. After soaking them thoroughly, grind them and keep them aside for fermentation. Prepare a smooth batter by adding salt as per taste. Fenugreek seeds give nice aroma and perfect texture to the batter.

Heat oil in a pan and add cumin seeds, mustard seeds and curry leaves to it. Now add chopped onion to it and fry it lightly. After this, add one cup chopped gourd or tinda and one cup chopped brinjal. Add salt and cover the vegetables and cook on low flame. Let the vegetables steam until they become soft.
Special paste of coconut and tamarind
While the vegetables are cooking, add half cup freshly shredded coconut, 4-5 soaked red chillies and 1/3 cup tamarind water in a mixer jar. Grind it and make a fine paste. This paste gives thickness, spiciness and sourness to the curry which is the lifeblood of this dish.

Pour the prepared coconut paste over the vegetables cooking in the pan. Now add half teaspoon coriander powder, 1/3 teaspoon turmeric and one teaspoon jaggery powder to balance the taste. Jaggery gives a unique taste by balancing the sourness of tamarind and the sharpness of chillies. After it comes to a boil, add fresh coriander and turn off the gas.
Giving ‘floral look’ to uttapam
Now heat the pan and pour a ladle of batter on it and spread it round. Now to give it a special ‘Ranni’ look, place a whole coriander leaf, two curry leaves and a round cut carrot piece in the middle in such a way that it looks like a beautiful ‘flower’. Apply light oil and cook it from both the sides.
