Ingredients for Poha Vada
- one cup thick poha
- 2 teaspoon oil
- one spoon chala dal
- one spoon mustard seeds
- half teaspoon fennel
- one spoon urad dal
- One onion, green chilli and ginger
- one spoon curd
How to prepare Poha
First of all, take a cup of thick poha and wash it thoroughly with clean water 2 to 3 times. During this time, you do not have to leave the poha soaked in water, otherwise it will melt too much. After washing, drain it and mash it gently. Chef Ranveer Brar has advised that Poha should not be kneaded like dough but should be kneaded till it starts joining together.
Special South Indian Tadka
The real taste of vada is hidden in its tadka. You have to heat 2 teaspoons of oil in a small pan. After that add chana dal, mustard seeds, fennel and urad dal in hot oil. Lastly add fresh curry leaves and let them crackle. After that add this hot tadka to the poha. This will give the vada excellent crunch and pleasant aroma.
Raw vegetables and spices
Now add finely chopped onion, ginger and green chilli to the poha. Onion and ginger not only add flavor but also help in keeping the vada soft from inside. Now add some salt and sugar, apart from this add crushed black pepper and mix. Also add one spoon curd at the end, this is necessary for sourness and good binding.
How to make Vada
As soon as the tempering and vegetables are mixed together in the poha, the dough will be ready. Now apply some oil on your hands and prepare small vadas from the mixture. You can shape them like medu-vada by making a hole in the middle or keep them normal.

Deep Fry or Air Fry
You have two options to fry poha vadas. If you want traditional taste then deep fry it in hot oil on medium flame. But if you want to have a healthy diet then you can make crispy ones in air fryer with less oil. Serve the prepared vadas with mint chutney or tomato ketchup.
