Often we get bored of eating fenugreek parathas or vegetables, but have you ever tasted crunchy vadas made by mixing fenugreek and gram dal. Actually, the recipe found on YouTube channel ‘Adhikari Ki Rasoi’ is best for those who want to make something different with less effort.

The fragrant aroma of chana dal, the mild bitterness of fenugreek and the crispness of poha together create a taste that surpasses even the kachoris and samosas in the market. The biggest feature of this breakfast is its texture. It is very hard from outside and soft from inside, it does not take much time to make.

Easy recipe to make healthy breakfast

Preparation and soaking of chana dal

The main ingredient of this recipe is half cup chana dal. First of all, clean the lentils and wash them thoroughly with water 3 to 4 times so that all the dirt is removed. After this, soak the pulses in enough water for one to one and a half hours. When the lentils swell, drain out all the water. Keep aside one teaspoon of whole dal, which will give a great texture to the vadas later.

correct way to grind

Put the remaining drained lentils in the mixer jar. Keep in mind that the pulses should not be ground very finely. Keep it slightly coarse, because coarse lentils taste more crispy after frying. Now take out this ground dal in a big mixing bowl and add the whole dal that you had saved to it.

Tadka of vegetables and spices

Now to add flavor to this mixture, add finely chopped onion, grated ginger and chopped green chillies as per taste. Add turmeric, cumin powder, salt and red chili powder to the spices. For a special touch, add white sesame seeds, which give a very pleasant taste after frying. Lastly add lots of freshly chopped fenugreek.

magic touch of poha

Add half cup of poha to bind the mixture and make it extra crispy. You can use Poha by washing or soaking it slightly so that it mixes well with the dal. Adding poha adds extra moisture to the mixture, due to which the vadas consume less oil while frying and remain crunchy for a longer time.

Mixing and shaping

Mix all the ingredients well with the help of hands so that the spices and fenugreek get mixed with the dal. Now apply some oil on your palms and take small portions from the mixture and give them the desired shape. You can make them like round vadas or flatten them like cutlets. Press the edges well so that they do not tear while frying.

fry and serve

Heat oil in a pan. When the oil becomes medium hot, carefully drop the prepared vadas into the oil. Fry them on medium flame until they become golden and crispy from both the sides. Due to frying on high flame, they may remain black from outside and raw from inside, so be patient. Serve ready hot breakfast with green chutney or tomato ketchup.
